Finding out you are Gluten Intolerant or have Celiac’s Disease can be difficut. Finding foods you like and don’t take hard to find and super expensive ingredients can be challenging. I am posting some of my favorite recipes. All have been tried and used repeatedly. Many have passed the test of carry-in meals and potluck dinners.
Turkey Meatloaf Burger
When I was first diagnosed with Celiac in 1984 it was very difficult to find any information about how and what to eat. There were very few recipe books on the market and virtually no suppliers of gluten free food.
The internet as we know it didn’t exist and you couldn’t go to pinterest or do a search and find a recipe for that night’s meal, or to the store and just purchase a packaged meal. I also had the challenge of feeding 2 teenagers and a husband.
Over the years I have had some wonderful successes and some giganitc failures. I will share some of the successes, since even the cat wouldn’t eat the failures.

One of our favorite easy fix to meals when we are busy or tired is a Turkey Meatloaf burger, sweet potatoe fries in the air fryer and coleslaw. It is quick and easy and even my husband can make dinner does it quite often.
This recipe is called burger because that was the way we used it first, Since then we have found we like the same recipe made into a meat loaf or meatballs in Maranara Sauce over spagetti or fetticini. Although it is only quick and easy because I make up 3 – 6 pounds of ground turkey into patties and meatballs and then freeze them until ready to use.
We often use fresh goat milk in this recipe. I know that is not an option for most people since they don’t raise goats or have access to fresh goat milk. Another great option is to make your own nut milk from organic nuts. We own a SoyaPower milk maker which is still available used on Amazon. The newer SoyaJoy G5 Soy Milk Maker & Soup Maker is also available.
These nut milk makers use water and nuts. The harder nuts like almonds you have to soak first and then filter. We use cashews which we can just add to the water, push the button and a couple of minutes (less than 5) we have a quart of milk ready to use and doesn’t need to be strained.
Turkey Meatloaf Burger
1 pound organic ground Turkey
1 organic egg
1 cup Gluten Free quick cooking oats
1/2 cup finely chopped onion (optional)
½ cup Amy’s Mild or medium Salsa or marana sauce.
2 Tablespoons fresh basil or 1 teaspoon dried basil
1 Tablespoon fresh oregano or ½ teaspoon dried oregano
¼ cup organic goat or cow milk or nut milk (This is the nut milk maker we own or the SoyaJoy G5 Soy Milk Maker & Soup Maker (newer model) or for moister burger or loaf ½ cup milk
½ cup organic Parmesan cheese (optional)
¼ – ½ teaspoon salt
Place all ingredients in a large bowl and mix together thoroughly. I use my hands to work everything into the ground meat.
Place in a conventional 4x4x8 loaf pan and bake for 1 – 1 ½ hours at 350°.
or
Our favorite way is to make it into patties and freeze with 2 pieces of parchment paper in between each patty. We then take out what we need and cook on the grill or a griddle pan 8 minutes on each side. Put your favorite toppings on the burger and put it between 2 pieces of lettuce or a gluten free roll, bun or tortilla.
Or
Make into 1″ meatballs, place on baking sheet or in a muffin tin and bake for 25 minutes @ 350°
